New York Strip Steak
From Hagerman Ranch, Greycliff, Montana
These steaks are cut from the front portion of the sirloin, also known as the short loin. This makes for an especially tender and tasty steak. Our New York Strip Steaks are flavorful and best prepared pan seared and oven finished! Steaks weigh about 8oz each.
About this cut
The New York strip is cut from the beef short loin subprimal, which is part of the loin primal. The loin primal is the source of many premier steak cuts – including the filet mignon. It's most often a boneless steak, although some butchers will cut the steak with the bone-in. The New York strip is often cheaper than its ribeye and filet cousins, but don't let the price fool you. It is also often called the "ultimate griller's steak" and appeals to all beef lovers. It has plenty of marbling (small white lines of fat within the meat) to give it the flavor that ribeye lovers enjoy, while at the same time being lean enough to please the filet folks.
How to cook it
We found a recipe from our friends at Snake River Farms for a tasty NY Strip steak salad with arugula --- perfect for a summer supper!! https://www.snakeriverfarms.com/recipes/post/tuscan-steak-arugula-salad/ Or if you want something a bit heartier, try this recipe for a classic NY strip with garlic butter! This recipe is done stove top, but it would work just fine to fire up your grill as well. https://www.dinneratthezoo.com/new-york-strip-steak/
