Raclette-Style Cheese As the name suggests, this is an unorthodox raclette aged for 3-4 months, with a unique taste. Still as creamy and luscious as you'd expect from a raclette, but with a distinctly tangy, fruity finish. Suggested Accompaniments: Dried fruit, cashew nuts, fruit preserves Beer Pairing Suggestions: Berliner Weisse, Gratzer/Grodziskie, American Wheat, Hefeweizen Suggested Wine Pairings: Gewürztraminer, Oaked Chardonnay, Cru Beaujolais
