Brisket
From Zero Cattle Ranch, Bennington, Oklahoma
These briskets are sooooo good on the smoker and have amazing flavor and tenderness! They are about 10-12 pounds each. We like to season ours with garlic, salt, pepper, onion, and paprika then smoke on the Big Green Egg for about 3-4 hours.
About this cut
Brisket is a cut of beef that comes from the lower breast or pectoral muscles of a cow. It's a well-exercised piece of meat, making it full of connective tissue and requiring the long cooking times that it's known for. But, when done right, it's hard to beat a brisket! A full brisket can weigh between 10 and 14 pounds but is usually cut up into the "flat" and the "point". 1/2 pound of raw brisket is equal to about 1 serving of cooked meat. Delicious and nutritious and popular with everyone, a smoked brisket will surely be the crowd favorite the next time you have friends and family over!
How to cook it
We found a great post from The Food Network that gives all the ins-and-outs of cooking brisket, along with some great recipes. https://www.foodnetwork.com/how-to/packages/food-network-essentials/what-is-brisket We also found a tried-and-true Traeger grill recipe (any smoker will work). https://www.traeger.com/recipes/beef-brisket No matter how you cook your brisket, give yourself some patience and grace. Mastering the perfect brisket truly is an art form, and it can take a few tries until you find the right seasoning/cooking method that works for you. Enjoy the process (and the delicious meat) along the way.
